
Chicken with Shallots and Buttered Noodles
My life goes so much more smoothly when I menu plan, so I don’t know why sometimes I resist or skip it altogether. Today was one of those days when I found myself resisting. Once I made myself sit down to do it, it took all of five minutes, and now for the rest of the week, I don’t have to worry about planning dinner.
Breakfasts:
Muffins, breakfast cake, hot cereal, smoothies, breakfast cookies
Lunches:
Quesadillas, turkey sandwiches, eggs in hats, grilled cheese, peanut butter sandwiches
Dinners:
Monday: Cheeseburger soup
Tuesday: Chicken with shallots and buttered noodles
Wednesday: Spaghetti with Italian sausage
Thursday: Fend for yourself night (I’m at pool league)
Friday and Saturday: Kids are at Daddy’s, so I’ll fend for myself
Sunday: Macaroni & cheese and bacon
Also: October 4?!?!!! Really? How did that happen? How is that even possible?
