Menu Plan for Nov. 8-15

I have not been feeling well at all lately. I’ll go into it more once I have a diagnosis (my GP just referred me to a specialist), but I am going to try to push through the fatigue and post more often! It does help me feel like I’ve accomplished something when I can look at the entries I’ve made and see what things I’ve done.

AND I’m going to start with Menu Plan Monday, because I cannot tell you how much menu planning helps with both my workload and with keeping me on track. That’s not to say I always keep to the plan – sometimes something else sounds yummier that day, or plans for the day change – but it’s nice to have that plan there nonetheless.

That said:

Dinners

Sunday: Tuna pasta with capers in white wine sauce
Monday: Crab cakes. Frozen from Costco, because I broke my own rule and went grocery shopping hungry, and I am a SUCKER for samples!
Tuesday: Macaroni and cheese with bacon
Wednesday: Cheeseburger soup and rolls
Thursday: Something from the freezer (Mommy’s at pool)
Friday: Cubed steak and mashed potatoes
Saturday: Something from the freezer
Sunday: Chile rellenos burritos

Lunches

Quesadillas, chicken sandwiches, grilled cheese, eggs with hats, beans and wienies.

Breakfasts

Farina, oatmeal, cold cereal, waffles, smoothies.
