Potatoes with Tomatoes and Cilantro Recipe

One of our “go-to” dinners is “breakfast for dinner”, or “brinner”, as some of my friends call it. Frequently, that means eggs with sausage and hashbrowns. But sometimes, it means fried potatoes with tomatoes and cilantro with the eggs instead. This is my favorite way with “brinner”!

Sometimes, my fifteen-year old and I will have this for lunch, too (the boys aren’t very fond of potatoes). I will give the recipe for two large servings. It doubles just fine.

Lighter Recipe for Spaghetti con Sugo di Tonno (Spaghetti with Tuna Sauce)

A couple of weeks ago, I tried making a lighter version of one of our family favorites, Spaghetti con Sugo di Tonno. I failed miserably. It was all going well until I decided that upping the fiber and protein would probably be a good idea, and I added a drained can of cannellini beans. Well, they turned to grainy mush that pretty much ruined the dish. I think maybe if I had added them nearer to the end… but I decided to skip them this time and rely on side dishes for the added fiber. This lighter version was as

I don’t like this – not one bit

My car is back in the shop. It wasn’t driving right yesterday. It’s misfiring or something. Of course, when the mechanic drove around in it (with  me in the car), it wouldn’t do the thing it was doing.

My daughter is busing to the mall, though, and so I had her text me whether or not my car is out in the parking lot, and it’s not. So they must be working on it now. I hope.

Recipe for Chocolate Chip Yellow Cake with Chocolate Cream Cheese Frosting

I like to make cakes from scratch because they taste about a hundred times better, they don’t have any ingredients I can’t pronounce, and the ingredients for cake are things I always have around the house anyway. This week, while my car was in the shop, I felt at ease knowing that at least we had everything I needed to make my boy’s birthday cake. Making a cake from scratch is really not any harder than making one from a mix.

Today my middle son is no longer a kid – he’s a teen! He requested two used computer games for his birthday, but he didn’t request them until  last week. With my car broken down, we’re making do with what we have this week. Strangely enough, it doesn’t look that much different than other weeks. I’m the kind of person who feels more secure and happy with lots of food in my pantry and freezer, so we’re going to be okay (although, I am so glad that I signed up for milk delivery a few weeks back).

Car trouble and its ramifications

Friday, as I was driving my kids to their dad’s for the weekend, my “check engine” light started blinking at me. I told the kids, “We’re going home.” I talked to the car all the way home, “You can do this, baby. You’re a good car. We’re almost there, honey! Oh, you’re so good. Grocery Shopping

This is an article I wrote back in 2000. It’s kind of interesting to read it and see what has changed, but most hasn’t.  We were a family of six in 2000, with my youngest son being less than a year old. Now there are only four of us, and he’s 10½!  Smaller changes are the we don’t eat the same thing for breakfast or lunch every day anymore, and I avoid buying pre-made anything (if I can’t pronounce an ingredient, I don’t want to serve it to my family).

Roasted Asparagus Recipe

Oh, how I love asparagus. It’s on sale everywhere right now, and it’s one of the fresh veggies that my kids will eat without complaint. As a matter of fact, my ten year-old squeals with delight when I mention that we’re having asparagus for dinner.

My favorite way to prepare asparagus is to roast it. It ends up with so much flavor; it’s crisp and tender all at the same time.
