I was going to post the recipe for my “lighter” version of Spaghetti con Sugo di Tonno, but to tell the truth, I messed it up. I will have to do that another time, when I get it right.
So I’m going to post a decidedly NOT light recipe. This is another thing that I put in my gift packages for people at Christmas. My 10 year-old son made them to give as gifts, too!
And let’s face it, minty chocolatey goodness isn’t just for Christmas!
Mock Thin Mints
Mock Thin Mints cooling on the parchment
2 sleeves of Ritz crackers (get the low salt ones if you can)
1 pound of semisweet chocolate chips
2 tablespoon butter
4 drops of peppermint extract
Crushed candy canes (optional)
Chocolate sprinkles (optional)Melt the chocolate chips with the butter in the microwave, stirring at 30 second intervals. When they are melted, stir until smooth and then stir in the peppermint extract.
Line a large baking sheet with waxed paper or parchment.

Using two forks, dip each cracker into the chocolate until coated and put on the baking sheet. When you’ve got a row of them, sprinkle the tops with crushed candy canes or chocolate sprinkles. Repeat until you are out of crackers.
Let them cool and then package them up for gifts or just eat them.
We were very surprised at how much these really taste like thin mints.

Hi, I found you on Balancing Beauty and Bedlam and wanted to comment on your mock thin mints. We like to put peanut butter between two Ritz crackers and then dip it in melting chocolate; it makes a really tasty cookie.
