My daughter has a friend visiting next week, starting on Friday. She’s an old friend from a homeschool group we used to be part of, but she moved out of state several years ago. The girls stayed in touch, and they are the best of friends. We’re looking forward to her stay, but I’m going to have to modify some of my cooking, as she’s a vegetarian. I think it’ll be fun to get creative in a new way.
Dinners
Monday: Spanakopita (recipe to come)
Tuesday: Salmon cakes and cous cous (recipe to come)
Wednesday: Gyros and roasted potatoes (gyros meat bought from a local market, with homemade tzatziki, tomatoes and lettuce in pitas; potatoes recipe to come)
Thursday: Fend for yourself night
Friday: Grilled cheese sandwiches and tomato soup
Saturday: Kids will be at my mom’s
Sunday: Chicken enchiladas and cheese enchiladas for my daughter’s friend (recipe to come)
Lunches
Quesadillas, sandwiches, beans and wienies, lentils and rice
Breakfast
Farina, oatmeal with fruit, cold cereal, smoothies

I love spanakopita! (when my son was small, he used to call it spank-opita. Yeah, he’s still a little odd sometimes. . .) I’ll certainly look forward to seeing your recipe.
I’ve decided to wait until next week, when my daughter’s friend is here, to make the spanakopita. I was running out of vegetarian ideas for next week!
