We love roasted asparagus around here! If there happens to be any leftovers, I chop them up the next day to use in an egg white omelet with tomatoes — yummy and healthy!

When I said we love it, that includes the dog. He can smell the asparagus roasting and sits by the oven until it comes out and he gets his share! He only does this with asparagus and sweet potatoes. Smart dog, lol.

I love asparagus…I’ve never roasted it so ..I’m going to fix it that way next time…so glad it is almost asparagus season again! Thanks for sharing!
