I frequently make these for our “Finger Food Buffet” on Christmas Day, and sometimes for parties (whether that’s a party I throw, or a potluck party I’m attending). They are super easy, and super tasty.
This time, for my daughter’s birthday party, I used Neufchâtel cheese, to make a small dent in the calories. I didn’t notice any difference at all in the flavor. Use what works for you, though!
Roast beef, basil, and horseradish cream cheese pinwheels
Roast Beef, Basil, and Cream Cheese Pinwheels
1 8-ounce package Neufchatel, brought to room temperature
2 tablespoons prepared horseradish (not horseradish sauce)
1/2 teaspoon salt
1/4 teaspoon pepper
3 spinach-flavored tortillas
3 ounces fresh basil leaves
3 ounces lean roast beef, thinly slicedMix together the cheese, the horseradish, and the salt and pepper. Spread 1/3 of the mixture on each of the tortillas. Top with enough basil leaves to cover the cheese but not overlap. Top the basil with thin slices of beef. Roll into a tight roll. Wrap in parchment or plastic wrap and refrigerate for 1-3 hours. Cut into 14 thin slices.
