This is a family staple – my mom used to make it (a little differently) when I was a kid, I make it for my kids, and my grown daughter makes it for herself and her boyfriend. I think we each put our own touch to it.
This is absolutely an Americanized version of goulash – it’s nothing like the Hungarian kind. I’m not even sure why we call it goulash, except for the paprika. It does make a great budget-stretcher, though – I’ve made with as little as a quarter pound of meat and no one complained.

I’ve totally gone off menu plan, but soup sounded so lovely. I had a rotten day yesterday, with a doctor’s visit that didn’t go well (no answers) and a bit of a panic attack (Ford Expeditions were NOT made for parking garages), and comfort food just sounded like the way to go.

Doodle, my 15 year-old, was in Texas visiting her grandmother for the last two weeks. She came home last night! We wanted to eat dinner together, but she didn’t get home until late, so I wanted something that I could do most of the cooking ahead of time, and just throw it together when she got home.
