I’ve totally gone off menu plan, but soup sounded so lovely. I had a rotten day yesterday, with a doctor’s visit that didn’t go well (no answers) and a bit of a panic attack (Ford Expeditions were NOT made for parking garages), and comfort food just sounded like the way to go.

We love French dips and meatball sandwiches and sub sandwiches around here, but the price of hoagie rolls is ridiculous. $3 for a pack of 6 smaller rolls – and there are 4 of us, so I’d have to buy two packs and have 4 left for lunch the next day. I was supposed to go to a potluck on Sunday afternoon, so I made this sun-dried tomato and roasted garlic focaccia. I was covered in hives, though, from an encounter with a friend’s cats*, so I ended up staying home. I ate almost the entire pan of focaccia myself. It’s tasty, and it’s super easy to make.

Soft honey wheat bread

2 cups whole wheat flour
5 cups bread flour
1 cup potato flakes
4 tsp. salt
1 tablespoon instant yeast*
2 cups water
2 tablespoons butter, melted
2 tablespoons honey
1/3 cup powdered milk
A little extra butter

Honey Wheat Bread
I have been baking my own bread for awhile, and I’ll be sharing recipes later, but I thought I’d share the reasons.
Homemade bread tastes and smells wonderful. There is nothing like the smell of bread baking in the oven – it just says “home“. I didn’t garden this year, and I am so missing it. Yesterday, I bought some zucchini at a natural foods store not too far from my house so I could enjoy one of the quintessential flavors of summer – zucchini bread.
