Super Tasty Salsa Recipe

This is almost the last of the recipes from Doodle’s birthday party.

The menu was:

Guacamole, salsa, and corn chips

Green chile pinwheels

Roast beef, horseradish, and basil pinwheels

Deviled Eggs

And, of course, birthday cake

We love my deviled eggs – I’ll post that one soon, too.

Making everything except the corn chips from scratch enabled me to give my daughter a lovely party with lots of food for a small outlay. And she’d prefer homemade to store-bought any day!

And now, on to the salsa. It’s really simple and quick, and wayyy less expensive than store-bought salsa. It also tastes a lot better than store-bought.

Fat-free and Super Low Calorie Roasted Garlic Dip Recipe

For the last few weeks, my grocery stores have had beautiful artichokes on display. Knowing that their best season (and their best price) is going to come to an end soon, I decided to pick a few up the other day.

Why did I wait so long? Well, I usually dip my artichoke leaves in melted butter — and I’m trying to lose weight. So I decided to create a low-fat and low-calorie dipping sauce, so I could enjoy one of my favorite veggies while it’s so plentiful and cheap.  Using in-season produce and pantry items makes me (and my wallet) happy.

Quinoa Tabbouleh Recipe

Our homeschool group has a monthly board game get-together for the kids who are age 10 and up. It’s usually on a Friday evening, but this month, it was on a Saturday afternoon. The mom who hosts served pizza. There were also some snacks that people brought (my daughter made snickerdoodles to share). My Guacamole Masher

A few years ago, I was in a kitchen supply store and I saw the most adorable “guacamole masher”. It had a cute cartoon avocado on the handle with a whimsical expression on its plastic face. The “business part” was exactly like the potato masher I had at home — and the adorable masher was priced at about 10 times what I’d paid for my potato masher!

I didn’t need to spend oodles of bucks for that toy, and I didn’t need it taking up extra space in my utensil drawer, either. As Alton Brown would say, it was a “uni-tasker”.

Seven-Layer Dip Recipe

Seven-layer dip is one of the classics, and it’s a great “potluck” item to bring to parties – it will definitely be one of the empty dishes at the end of a bash.

Seven-Layer Dip

Seven-layer dip – so pretty and festive!

2 cans refried beans
1/2 cup salsa
1 15-oz. container of sour cream
1 cup shredded cheese (I used a blend of cheddar, jack, and asiago)
1 small can sliced black olives

For pico de gallo:
2 tomatoes, diced
2 shallots, diced
1 jalapeno, seeds and membrane removed, and diced
Juice of half a lemon or a lime
1/2 teaspoon kosher salt

Roasted Red Pepper Dip Recipe

This is the easiest reciep ever. And it’s just incredibly flavorful, and it’s gorgeous – a rich orange-y red and velvety.

Roasted Red Pepper Dip

You need:

Two 10-oz. jars of roasted red peppers
A couple teaspoons olive oil (optional)

Here’s all there is to it:

Drain the peppers and whiz them in the food processor until it makes a smooth sauce. Dip a finger in (with the processor OFF, of course. Heh.) and taste it. If it doesn’t feel velvety enough, drizzle in a little olive oil.  If it doesn’t taste salty enough, add a little salt. (Sorry to be a little vague on these last
